Doubling a recipe does not mean multiplying every number on the page by two. Do that with the baking powder and the salt and you will taste exactly what went wrong — the batter will collapse and the seasoning will be harsh enough to notice.
Scaling works cleanly for bulk ingredients and badly for anything that acts on the batter from the inside: leavening, salt, spices, and strong extracts. The trick is knowing which column each ingredient belongs in before you touch the mixing bowl.
What scales linearly — and what does not

The baseline most bakers use is 1 teaspoon of baking powder per cup of flour and about ¼ teaspoon of salt per cup of flour. Double the flour to four cups and you want roughly 1½ teaspoons of baking powder, not 2 — the extra cup of flour already dilutes the batter, and over-leavening makes a cake fall in the centre.
Pan size changes the maths more than quantity does
A 9-inch round pan holds about 63.6 square inches of batter surface. A 13×9-inch pan holds 117 square inches — 1.84 times as much. Doubling a batter and baking it in the same 9-inch pan makes the layer twice as deep, and cooking time rises by roughly 40% because heat has to travel twice as far. Move the doubled batter to the 13×9 pan instead and the depth barely changes, so the original temperature and time still work.
Worked example: doubling a two-cup-flour cake
- Original: 2 cups flour, 1 tsp baking powder, ½ tsp salt, 1 cup sugar, ½ cup butter, 2 eggs, ¾ cup milk
- Doubled: 4 cups flour, 1½ tsp baking powder, ¾ tsp salt, 2 cups sugar, 1 cup butter, 4 eggs, 1½ cups milk
- Bake in a 13×9-inch pan at 350°F for roughly the same time as the original, or 10–15 minutes longer in the deeper 9-inch round
Halving is harder than doubling
A large egg weighs about 50 grams and measures roughly 3.25 tablespoons. To halve a recipe calling for one egg, beat it first and measure out about 1½ tablespoons; the remaining half keeps for a day in the fridge and can be used for an egg wash.

FAQ
Does cooking time double when I double a recipe? No. In the same pan, time rises by roughly 10–40% depending on how much deeper the batter gets. In a wider pan that keeps the depth similar, the time barely changes.
Can I just double the salt? You can, but for a 2× batch about 1.5× the salt usually tastes right. Season at 1.5×, taste, and add only if it still tastes flat.
What about yeast? Yeast scales close to linearly (so 2× for a double batch), but a larger dough mass proofs faster from its own heat, so start checking well before the original time.
Do sauces scale the same way? No. Longer simmering evaporates more liquid, so concentrated sauces need less reduction time and often slightly less salt than a straight doubling suggests.
